- Combine filling ingredients in a small bowl and set aside.
- Slice each chicken breast in half horizontally with a sharp knife, but not all the way through. Spread cream cheese mixture inside the pocket, (per recipe below) fold over and secure with a toothpick.
- Season the outside of the chicken and place in air fryer basket.
- Air fry until a meat thermometer reads 165°F.
PRO TIP: Pat stuffed chicken breasts with a clean paper towel so the oil and seasonings cling.

Ingredients
- 4 boneless skinless chicken breasts 5-6 oz each
- 1 tablespoon olive oil
- ¼ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon each salt & pepper
Filling
- 4 ounces cream cheese softened
- 2 tablespoons parmesan cheese
- 1 clove garlic minced
- 1 cup fresh spinach finely chopped
- 3 tablespoons chopped sundried tomatoes
- ½ teaspoon Italian seasoning
Instructions
Preheat the air fryer to 360°F.
Combine the filling ingredients and set aside.
Cut chicken breasts ¾ of the way through so it opens like a book. Do not cut all of the way through.
Fill each chicken breast with ¼ of the filling mixture. Fold closed and secure with a toothpick.
Rub the chicken with olive oil and seasonings. Place in the air fryer in a single layer.
Cook 18-22 minutes or until an instant-read thermometer reads 165°F.
