This chilaquiles con huevos recipe is a quick and easy Mexican breakfast comprised of fried tortillas, salsa, eggs and cheese. I mean what's not to like.

When it comes to breakfast, while you can have both sweet or savory, I lean savory - from bacon cheddar scones to sous vide egg bites to breakfast egg rolls.

But does a Mexican-themed breakfast come to mind often? If it doesn't your missing out and chilaquiles con huevos might be one of the most famous dishes.

If you don't know, chilaquiles is a traditional breakfast dish consisting of corn tortillas lightly fried and cooked in salsa. They are usually served with some eggs and cheese as well.

It's one of those dishes that comprises mostly ingredients you already have and can be prepared in under 20 minutes. My mouth is salivating just typing this!

Ingredient Notes

  • Tortillas - you want good corn tortillas so you get that crispy texture with the ones that haven't soaked up the salsa.
  • Oil - the tortillas are lightly fried in the oil to crisp them up.
  • Eggs - adds protein and where the "huevos" comes from. You can cook them your favorite way, whether it is scrambled, sunny-side or over easy.
  • Salsa - I use a medium store-bought salsa for its ease and flavor.
  • Cheese - adds some melty factor and flavor.

Ingredient Swaps

Like any recipe you can mix up some of the ingredients. Some variations include:

  • While I like to fry my own corn tortillas, you can also just buy store-bought tortilla chips.
  • I'm a fan of store-bought salsa, but you can also make your own homemade salsa or even use a green version like salsa verde.
  • I like pepper jack cheese, but cheddar or Monterey jack cheese works great as well.

Fry corn tortillas in oil in a large skillet in batches for 1-2 minutes. Remove and cook the eggs until scrambled. Remove from the skillet as well.

Add the salsa and cook for 2 minutes before adding the fried tortillas, tossing in the salsa. Add the eggs and top with the cheese. Cover until the cheese melts.

What is the Difference Between Chilaquiles and Migas?

Chilaquiles is made with corn tortillas and salsa with other ingredients potentially like eggs and cheese. Migas is leftover stale bread or tortillas cut into strips and then cooked with eggs and tomatoes.

Are Chilaquiles Supposed to be Crunchy?

So it is very similar to nachos where you want some of the chips to soak up the salsa, but also keep some crunch edges. This gives you the best of both worlds.

Can I Bake the Corn Tortillas?

Yes you can. I prefer to fry in the skillet so I can prepare the dish quickly and only use one piece of equipment to clean.

However if you want to bake, toss in some oil and bake in a sheet at 350°F for 15-18 minutes, tossing halfway through.

What are the Best Toppings?

So while the chilaquiles con huevos is great on its own, you can add plenty of toppings. Some options include:

Can I Make Ahead?

I would recommend making when you are ready to eat. Because of the fried tortillas and wanting some random crunch, if you make ahead, everything will be soggy. It also doesn't make for great leftovers for this reason.

Equipment

The equipment you use is important to how the recipe turns out. What is needed is the following:

  • Skillet/Dutch oven - you want something large enough to be able to fry the tortillas and serve it in.
  • Cooking tongs - you need something to toss in the chips in the oil and mix all of the ingredients together.
  • Cheese grater - you want to use fresh cheese so you need a grater to shred it.

Pro Tips/Recipe Notes

  • If you want a crispier texture, remove the sauce from the heat and just toss the chips with the eggs and cheese. Then add the sauce on top of some random chips.
  • If you have leftover protein like chicken or beef, just add it to the skillet.
  • Add some jalapeñoswith the seeds if you like extra heat.
  • Don't usepre-shredded cheese. It contains wood pulp and preservatives so it doesn't melt well.

Ingredients

  • 6 corn tortillas, cut into triangles
  • ¼ cup vegetable oil
  • salt
  • 4 large eggs, lightly beaten
  • 1 cup salsa
  • ½ cup pepper jack cheese
  • toppings (avocado crema, cilantro, green onions, peppers, cheese)

Instructions

  • Heat oil in large skillet over medium heat. Add the tortillas in batches, frying for 1-2 minutes per side. Transfer to a paper towel-lined plate and lightly salt.

  • Add more oil if necessary and cook the eggs until scrambled. Remove from the skillet.

  • Add the salsa to the skillet, cooking for 2 minutes. Return the fried tortillas to the the skillet and toss gently in the salsa.

  • Add the eggs, stirring to combine and top with cheese. Cover the skillet so the cheese melts. Top with your favorite toppings.
